Olive Oil Fried Eggs With Mozzarella

(4 servings)

  • 1/3 cup extra-virgin olive oil - for the sauce
  • 1/4 extra-virgin olive oil - for frying
  • 2 teaspoons purchased hot pepper relish or paste
  • 1 garlic clove - minced
  • 1 garlic clove - peeled but not minced
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 4 1-inch-thick slices of bread - lightly toasted
  • 4 large eggs
  • 6 ounces fresh mozzarella cheese - drained and coarsely grated
  • 1/4 cup fresh Italian parsley leaves
In a small bowl, whisk together 1/3 cup olive oil, hot pepper paste, minced garlic, lemon juice and salt.

Preheat broiler.

Rub toast slices on one side with peeled garlic clove. Place on 4 individual serving plates.

Place 1/4 cup olive oil In a large oven-proof frying pan over medium heat. Gently break the eggs into the frying pan - keeping the yolks in tact. Season to taste with salt. Cook sunny-side-up so that the whites are set and the yolks are still runny. Remove from heat. Sprinkle evenly with mozzarella. Place under broiler until cheese melts - about 90 seconds .

Place one egg over each slice of toast. Spoon hot pepper and garlic sauce over each egg. Garnish with parsley.


A delicious and elegant egg and toast dish. You can usually find the hot pepper paste (sometimes called relish) in the Middle Eastern or general ethnic foods section of your grocery store.
