Southwestern Matzah Brei

(2 servings)

  • 2 whole matzos
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 Tablespoon butter
  • 1 green onion - chopped
  • 1/2 small jalapeno pepper - minced
  • 2 teaspoons chopped fresh cilantro
  • 1 small tomato - diced
Soak the matzos in warm water for 3 minutes until soft. Squeeze the water out of the matzos. Break each one into bite-sized pieces. Set aside.

In a medium-large frying pan over medium heat, melt the butter and add the onion, jalapeno and cilantro. Cook for 90 seconds, stirring often. Add the eggs and stir until the eggs are scrambled and just slightly underdone. Add the matzo pieces and the diced tomato. Stir to combine, then flatten the mixture with a spatula.

Once the underside is nicely browned, flip and flatten again with the spatula. It's okay if it breaks apart as you flip. Cook until the bottom is golden brown.

Serve with your favorite salsa and garnish with additional cilantro.
