Banana Pancakes

(6 servings)

  • 1 cup milk
  • 1 egg
  • 1/2 cup plain or vanilla yogurt
  • 1 Tablespoon vegetable or canola oil
  • 1 and 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 Tablespoons sugar
  • 1 banana - sliced into small pieces
  • butter - for frying
In a large mixing bowl, combine the milk, egg, yogurt and oil. Beat until well combined.

In a separate bowl, mix together the flour, baking powder, salt and sugar.

Add the dry ingredients and banana pieces to wet ingredients. Stir until just mixed and moistened - batter will be lumpy.

In a frying pan over medium-high heat, melt about 2 teaspoons of butter. Dollop batter (about 1/4 cup per pancake) into the hot pan. Cook until edges appear dry and bubbles form over the the tops. Flip and cook other sides to golden brown.


These pancakes are wonderful topped with butter and pure maple syrup. Also try topping with additional banana slices and whipped cream.
