Mexican Crustless Quiche

  • 5 large eggs
  • 1/4 cup all-purpose flour
  • 2 Tablespoons butter - melted
  • 3/4 of a 16 ounce container of cottage cheese
  • 2 cups shredded Monterey Jack or Cheddar cheese
  • 1 4-ounce can of green chili peppers (with juice)
Preheat oven to 400 degrees.

Prepare a 9-inch quiche dish or pie pan by spraying the inside generously with cooking spray.

In a large bowl, beat the eggs until frothy. Add the flour and melted butter (cooled to room temperature) and give it a nice mix.

Add the cottage cheese, green chilies and about 3/4 of the shredded cheese. Mix until well combined. Mixture will be lumpy.

Pour mixture into prepared pie pan. Bake for 10 minutes at 400 degrees. Reduce heat to 350 and bake an additional 20 minutes.

The quiche is done when a toothpick inserted into the center comes out clean.

Top with the remaining shredded cheese. Let the quiche set for 5 minutes before slicing into wedges and serving.


This is a very easy recipe. Basically you just mix together 6 things, pour it in a pie dish, cook it and eat it. Delicious!
