Crunchy Stuffed French Toast (High Fiber)

- 8 slices whole grain bread
-
4 Tablespoons light cream cheese
-
4 teaspoons low-sugar orange marmalade
-
2 large eggs + 2 egg whites
-
1 teaspoon vanilla extract
-
1 Tablespoon brown sugar
-
1 1/2 cups bran flakes cereal
-
2 Tablespoons vegetable oil
-
2 Tablespoons unsalted butter
-
Zest and juice of 1 orange
Spread 4 slices of bread with cream cheese. Spread the other 4 slices with the marmalade. Combine to make 4 sandwiches.
Whisk the whole egg, egg whites, orange juice and zest, vanilla and brown sugar together in a bowl. Place the bran flakes in a ziploc bag and crush lightly. Pour the flakes onto a plate. Dip both sides of each sandwich into the egg mixture then in the crumbs, pressing the crumbs lightly into the bread.
Heat 1 Tbsp. of each oil and butter in a skillet over medium heat. Cook the sandwiches in 2 batches (3-4 minutes on each side until golden brown and crisp.)
Slice the sandwiches crosswise into triangle. Let cool slightly before serving - as the filling can get quite hot.
Sprinkle with powdered sugar or serve with honey or maple syrup if desired.
