Broccoli Quiche

(6 servings)

  • 1 9-inch unbaked store-bought pie crust
  • 2 Tablespoons butter
  • 2 cups chopped fresh broccoli
  • 1 small onion - finely chopped
  • 1 clove garlic - minced
  • 1 and 1/2 cups shredded mozzarella cheese
  • 4 large eggs
  • 1 and 1/2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Preheat oven to 350 degrees.

Punch several little holes in the bottom of the pie crust with a fork. Bake the crust alone for 8 minutes and remove from oven.

In a large saucepan over medium heat, melt the butter. Add the broccoli, onion and garlic. Stirring often, cook until broccoli is soft and onions just begin to brown.

Pour the vegetables into the par-baked pie crust. Sprinkle cheese evenly over the vegetables.

In a medium bowl, beat the eggs with the milk and seasonings. Pour this mixture over the ingredients in the pie crust.

Bake for 30 minutes or the egg is completely set. You can test by inserting a toothpick into the center. If it comes out clean, the egg has set.

Slice into 6 wedges and serve hot.


The directions say to serve this quiche hot, but it's just as good cold or at room temperature. My husband actually prefers it cold. Enjoy!
