Sour Milk Pancakes Or Waffles

(4 servings)

  • 2 whole eggs - separated
  • 2 cups milk (2% lowfat) - soured (stir in 2 Tablespoons vinegar and allow to sit for 10 minutes)
  • 2 cups all-purpose flour
  • 1 Tablespoon Splenda
  • 1 teaspoon salt substitute
  • 1 and 1/2 teaspoons baking soda
  • 1/2 cup melted butter
Place egg yolks in a large bowl and the egg whites in a smaller bowl. Beat the egg whites until stiff but still moist - set aside.

Beat egg yolks well, stir in the sour milk.

In another bowl mix the dry ingredients until well mixed.

Add the flour mixture to the yolk mixture and beat until smooth.

Stir in the melted butter and mix until well blended.

Gently fold the beaten egg whites into the batter.

Cook as pancakes on lightly greased hot griddle or as waffles in a hot waffle iron.


These are light and delicious. My husband who is not really a pancake person likes these because they are not heavy.
