Swabian Eggs With Croutons
This is basically eggs scrambled with pieces of bread, but the result is much more tasty than you would think. It had just the right amount of onion where the onion feels more like a seasoning. Browning the bread cubes in butter (aka making pan-fried croutons) adds a buttery flavor to every bite and transforms whatever bread you're using into something fresh and new. You might be tempted to add cheese to this scramble, but you should try to resist that until you see how good it is on its own. Bottom Line: This was very easy to make and very satisfying to eat. - 1 and 1/2 Tablespoons butter
1 slice of bread - crust removed and diced
1 Tablespoon onion - finely chopped
2 large eggs
1 Tablespoon of milk
salt and pepper - to taste
How to Make Swabian Eggs With Croutons
Lightly beat the eggs with 1 Tablespoon of milk and a pinch of salt. Set aside.
Melt the butter in a medium skillet over medium-high heat. Add the diced bread and onion. Stirring occasionally, saute until onions are softened and bread is golden brown. Reduce heat to low. Add the eggs. Season to taste. Scramble until eggs are completely set. Serve and enjoy.
Cooking Notes From Mr Breakfast
I cut my bread into 1/2 inch pieces. That worked great. I could see it working well with smaller pieces, but I wouldn't go much bigger.
The original recipe submitter said they like making this with white bread. I liked it best with a multi-grain bread.
Swabia is region in southwestern Germany. There, this dish is called Schwabische Ruhreier. It's eggs scrambled with sauteed onions and bread cubes fried in butter. Delicious and different.
