Baked Apple Pancake

(6 servings)

  • 1/2 cup sugar
  • 1/4 cup confectioners sugar
  • 1/4 teaspoon vanilla
  • 1/8 teaspoon nutmeg
  • 3 teaspoons ground cinnamon
  • 6 eggs - beaten and room temperature
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup milk at room temperature or 1/2 cup heavy cream and 1/2 cup half & half
  • 1 stick butter
  • 3 or 4 Granny Smith apples - thinly sliced
  • 1/2 cup pecans - if desired
Preheat oven to 400 degrees. In a small bowl, combine sugar and cinnamon; set aside. In a large bowl, combine eggs, vanilla, salt, flour, nutmeg, confectioners sugar and milk; beat until batter is smooth.

In a large heavy ovenproof frying pan or a 14 inch cast-iron skillet over medium heat, melt butter, turning pan to cover sides. Add apples and sprinkle with sugar and cinnamon mixture. Stir and let cook for 5 minutes. Then add the pecans at this point if you want them in the pancake. Next pour the batter over the apples in the pan and bake 25 minutes or until the pancaked is puffed above sides of the pan and lightly browned.

Remove by flipping upside down onto a serving platter (apples and cinnamon will be on top). Serve immediately.
