Cheddar Bacon Souffle

(4 servings)

  • 2 cups quality aged cheddar cheese - shredded
  • 5 large eggs - separated
  • 6 or 8 slices bacon - cooked and crumbled
  • 3 Tablespoons butter
  • 3 Tablespoons flour
  • 1/2 teaspoon dry mustard
  • 1 cup milk
  • 1/2 teaspoon salt
Melt butter in a medium saucepan. Blend in flour, mustard and salt. Gradually stir in milk. Cook over medium heat, stirring constantly until mixture comes to a boil and thickens. Remove from heat.

Add cheese and stir until melted. Beat egg yolks well. Stir in a small amount of cheese mixture into yolks; add yolk mixture to saucepan and blend thoroughly. Stir in bacon. Beat egg whites until stiff, but not dry. Stir a large spoonful of egg whites into cheese sauce. Fold in remaining egg whites. Turn into a greased souffle dish measuring about 8" across and 3 1/2" deep.

Bake in preheated oven at 325 for 45 to 50 minutes. Serve immediately.


There's a lot of cheese and bacon in this recipe so it isn't a real healthy souffle, but it is a real delicious one. You can replace the shredded Cheddar with any favorite cheese. You can also replace the bacon with cooked and crumbled breakfast sausage.
