Buttermilk Chocolate Banana Pancakes

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 Tablespoon sugar
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup buttermilk
  • chocolate chips
  • 1 large banana - sliced into coins
In a medium bowl, combine the flour, baking powder, baking soda, sugar and salt. Mix well.

In a separate bowl, beat the egg. Add the buttermilk and stir until just combined.

Add the wet ingredients to the dry ingredients and stir until just combined.

Preheat griddle to 375 degrees (medium-high for frying pan on stove top). Use cooking spray or butter to grease the hot surface.

Dollop batter in 1/4 cup portions per pancake. Sprinkle a small handful of chocolate chips into each pancake. Push 3 or 4 banana slices gently into each pancake.

Once the edges appear dry and bubbles form at the top of the pancakes, flip and cook other side to golden brown.


Serve with softened butter and warm maple syrup or simply dust with powdered sugar. These pancakes have a lot of flavor.
