Apple Raisin Kugel

  • 1 8-ounce package of medium egg noodles
  • 1/4 cup melted butter
  • 4 large eggs - beaten
  • 1 and 1/4 cup chopped apples (about 2 medium-sized apples)
  • 1/4 cup raisins
  • 1/4 cup sliced almonds (optional)
  • 1/4 cup sugar
  • 1 and 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon vanilla
Cook noodles until tender as directed on the package. Drain and transfer to a large bowl. Let set at least 5 minutes.

Preheat oven to 350 degrees. Prepare a 9 x 13 baking dish by coating generously with cooking spray.

Add the melted butter and beaten egg to the noodles. Stir gently to combine. Add all remaining ingredients to the noodles. Mix well, but try not break the noodles.

Place noodle mixture in prepared baking dish.

Bake for 45 to 50 minutes until nicely browned on top.

Dust with additional cinnamon. Cut into squares and serve.


Kugel means "pudding", but I think of it more like a crazy coffee cake. It's easy to make and great for breakfast.
