Spicy Pumpkin and Bacon Waffles

(6 servings)

  • 2 cups all-purpose flour
  • 1/2 cup light brown sugar - packed
  • 1 and 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 teaspoons ginger
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup buttermilk
  • 1/3 cup whole Milk
  • 2 large eggs - separated
  • 6 ounces cream cheese - softened
  • 4 Tablespoons unsalted butter - melted
  • 8 slices of bacon - cooked and crumbled
Combine all dry ingredients and blend well.

Mix together pumpkin, buttermilk, milk, egg yolks, melted butter and cream cheese. Mix well. Then stir in the cooked, diced bacon and set aside.

Beat egg whites until stiff peaks form.

Add the dry mixture to the pumpkin mixture and stir to combine. The batter will be thick, but do not over-mix. Gently fold in the egg whites until well combined.

Pour 1/2 cup of batter into a preheated waffle iron and cook until you don't see any more steam rising from the iron. Store the finished waffles on a wire rack in a warm oven so they won't get soggy while you finish cooking all the batter. Serve with honey butter and your favorite syrup.


Pumpkin waffles are good. Bacon is great. Pumpkin pancakes with bacon baked in are awesome. Cinnamon, ginger, nutmeg and cloves add the spice.
