Whole Wheat Banana Waffles

  • 1 and 1/3 cup whole wheat flour
  • 1 cup skim buttermilk*
  • 1/3 cup egg whites
  • 1/4 cup non-fat plain yogurt
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 medium banana - diced
Beat the egg whites for a few minutes. Then add buttermilk (or skim milk), yogurt, salt and flour. Beat till everything is well blended. Then add the baking powder, and continue beating. Use 1/2 cup per waffle and add the diced banana on top immediately after pouring the batter into the iron.

Cook according to the directions for your waffle maker. For mine, I spray the plates with cooking spray before each waffle.

*If you can't find buttermilk simply add 1 Tablespoon of lemon juice to one cup of milk and let it rest for 5 minutes.


This won't yield a crispy waffle but the final product is really good and healthy. Each waffle is about 5 inches in diameter.
