Healthy Cheddar Sausage Strata

(4 servings)

  • 2 slices white bread - torn into pieces
  • 2 slice whole wheat bread - torn into pieces
  • 4 turkey sausage patties
  • 1/3 cup chopped onion
  • 3/4 cup fat-free milk
  • 3/4 cup egg substitute (equivalent to 3 large eggs)
  • 1/2 cup low-fat sour cream
  • 1/4 cup reduced-fat Cheddar cheese
  • your favorite salsa - for topping
Prepare an 8-inch baking dish with a generous coating of cooking spray. Place the bread pieces in an even layer in the bottom of the dish.

In a small skillet lightly coated with cooking spray, saute the sausage with the onions - breaking the sausage into small pieces with a spatula as it cooks. Saute until the sausage is lightly browned - about 5 minutes.

Drain any liquid from the skillet and spoon the sausage and onion over the bread in the baking dish.

In a medium mixing bowl, combine all remaining ingredients (except salsa). Mix well and pour mixture evenly over the ingredients in the baking dish.

Cover and refrigerate overnight - at least 4 hours.

When ready to prepare... remove dish from refrigerator. Let it set at room temperature at least 15 minutes before baking.

Bake at 325 degrees for 40 minutes or until a knife or toothpick inserted in the center comes out clean.

To serve, cut into 4 squares and top each serving with a generous dollop of salsa.


You can use all white bread for this recipe. But if you use all wheat bread, it doesn't work as well - it ends up tasting too rustic and doesn't look as nice.
