Scrambled Eggs with Tomato (Yumurtali Domates)

(2 servings)

  • 1 cup crushed tomato
  • 3 eggs beaten
  • 1 tsp flour
  • 1/2 cup milk
  • 1/2 tsp salt to taste
  • 2 tbsp butter
  • 1/4 cup shredded mozzarella cheese for topping(optional)
In a pan, melt the butter and stir in flour. Cook 1-2 minutes over low heat. Then add tomatoes and cook 2-3 minutes over low heat.

Stir in milk and salt. When it comes to a boil, add eggs and cheese. Cook on low heat stirring constantly, till the eggs are cooked. Serve warm with some shredded cheese on top.

This is a delicious and healthy Turkish breakfast egg dish and is great served with warm turkish bread or pita.
