Easy Spicy Tofu Scramble

(2 servings)

  • 1/2 small red onion - chopped
  • 3/4 cup medium or hot salsa
  • 1 12-ounce package extra firm tofu - drained and sliced into 1-inch cubes
  • 1/2 teaspoon turmeric
  • salt and pepper - to taste
  • olive oil - for frying (about 2 Tablespoons)
In a skillet over medium-high heat, saute the onion in olive oil until soft and translucent - about five minutes stirring occasionally.

In a medium bowl, toss together the salsa, tofu and seasonings. The tofu should crumble as you mix.

Pour the tofu mixture into the skillet with the onion. Stir immediately to incorporate the onion into the tofu mixture. Continue cooking - stirring (or scrambling) often - for 5 to 10 minutes until the tofu is browned to your liking.

Serve warm with toast or tortillas.

You cold also add chopped peppers or mushrooms... whatever you like. But this is the version I usually make. The whole thing takes about 15 minutes.
