Raisin and Cinnamon Rice Porridge

(4 servings)

  • 1/2 cup rice
  • 1/2 cup water
  • 2 cups skim milk
  • 1/4 cup raisins
  • 2 Tablespoons sugar - optional
  • cinnamon - to taste for garnish
Combine rice and water in a small saucepan. Bring to a boil and immediately reduce heat to simmer. Simmer uncovered until liquid is absorbed.

Add Skim milk and raisins, simmer for about 20 minutes more - until the rice is tender. Stir occasionally. If desired, stir in sugar.

Serve in bowl and sprinkle cinnamon over the top.

Can be served with some cold milk over the top.
