Tropical Waffles

(4 servings)

  • 2 Tablespoons macadamia nuts - crushed and pan toasted
  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 Tablespoon sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup orange juice (preferably fresh-squeezed)
  • 1 Tablespoon canola oil
  • 1 teaspoon vanilla extract
  • 1 banana - sliced
  • maple syrup
Toast macadamia pieces in a fry pan over medium heat (stirring often) until browned and fragrant.

In a large mixing bowl, combine the all-purpose flour, whole-wheat flour, baking powder, sugar and salt.

In a separate medium bowl, beat the egg. Mix in orange juice, oil and vanilla.

Add the wet ingredients to the dry ingredients and stir until just combined and moist. Fold in the macadamia nuts.

Cook according to the instructions for your waffle maker.

Serve waffles warm with sliced banana and maple syrup on top.


For a specialty tropical syrup, add coconut milk to maple syrup and simmer until warm and well-combined.
