Bisquick Breakfast Pie

(6 servings)

  • 2 cups Bisquick
  • 2/3 cups milk
  • 2 cups thinly sliced onions
  • 2 Tablespoons butter
  • 1/2 teaspoon salt
  • freshly ground pepper
  • fine herbs - to taste
  • 1/2 cup sour cream
  • 1 large egg
Preheat the oven to 450 degrees.

Place butter in a large skillet over high heat. Add the onions and saute them until tender and browned. Season them with salt, pepper and fine herbs.

Add milk to Bisquick and stir with a fork into a soft dough. Roll out on a floured board into a 10-inch square. Pat well into a well-greased 8-inch-square pan. Spoon the onions evenly over the top of the dough.

Beat the egg and sour cream together with a whisk until smooth. Pour evenly over the onions and bake about 20 minutes, until lightly browned. Cut and serve.

According to the intro for this recipe in the book Sunday Breakfast, this is an onion custard pie that goes well with a breakfast of meat and eggs.
