Mediterranean Egg Scramble

(1 serving)

  • 3 Tablespoons onion - chopped
  • 1/4 cup tomato - chopped
  • 4 Kalamata olives - chopped
  • 2 large eggs
  • 1/4 teaspoon oregano
  • 1 dash Zaatar (optional)
  • salt and pepper - to taste
  • 2 Tablespoons crumbled Feta cheese
In a nonstick pan, saute onions, tomato, and olives together until the onion begins to brown. Remove to plate or bowl and set aside.

In the same pan, scramble the eggs. Just as eggs begin to finish cooking, sprinkle in the oregano, Zaatar, and salt and pepper. Add the onion mixture and mix together just as eggs are finished cooking.

Pour into bowl or onto plate and sprinkle with Feta cheese.
