Hot Water Hoecake

(4 servings)

  • 1 cup white cornmeal
  • 1/2 teaspoon salt
  • 2 and 3/4 cups boiling water
  • 1 Tablespoon melted butter (optional)
Add salt to cornmeal. Pour boiling water over all. Mix and let set for a few minutes. (Cornmeal will swell.) Drop batter from tip of cooking spoon on hot greased or buttered griddle or skillet (or the blade of your hoe, if you're a purist.)

Let brown on one side until edges are brown and crisp. Turn over and brown on other side until edges are crisp.

Serve right away with a cold dab of butter on each hot hoecake.


According to Dinah Shore, "I don't know why these are so good. They're nothing really, but I guess it's the combination of crispness on the outside and the nutty cornmeal flavor on the inside and that little dab of cold butter - ummmm!"
