Mediterranean Scramble

(4 servings)

  • 1 small red bell pepper - finely chopped
  • 1 small onion - finely chopped
  • 1 and 1/2 Tablespoon butter or margarine
  • 6 large eggs or egg substitute equivalent
  • 2 Tablespoons milk
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1 dash cayenne pepper
  • 1/4 cup crumbled feta cheese
Melt the butter in a large skillet over medium-high heat. Add the bell pepper and onion and saute until tender - 3 or 4 minutes - stirring often.

In a medium bowl, beat the eggs with the milk and all seasonings.

Add the egg mixture to the vegetables in the pan. As soon as the egg starts to set, stir (scramble) everything around until the eggs are completely set. Turn off the heat and stir in the cheese.

Transfer to serving plates and enjoy!


This is a terrific scramble with lots of flavor. You could also add chopped cherry tomatoes as soon as the eggs start to set. For the best experience, serve with warm flat bread. Mmmm.
