Healthy Veggie Egg Sandwich

(2 servings)

  • 2 large eggs
  • 1 teaspoon milk (optional)
  • carrot - one large grated
  • onion - one large grated
  • cabbage - one large grated
  • bread slices
  • salted butter or margarine
  • mayonnaise and/or white sauce (optional)
  • prepared mustard (optional)
Heat oil in a pan and lightly saute the onions, cabbage and carrot. Add salt, pepper and garam masala powder (optional) to the the veggie mix and saute for 3-5 minutes.

Beat the eggs with milk (if you are using it) and add the egg to the veggie mix. Cook until egg is done. Remove from fire. You could add chopped parsley or coriander leaves or even mint leaves if you like the taste. If you are using mint, add it just before the eggs. The parsley or coriander may be added just before removing egg mixture from fire.

Spread the bread slices with butter/margarine, mayonnaise and/or white sauce, mustard... whatever you like. Take two of these slices and put some of the veggie/egg mixture between them and toast in a sandwich toaster. See to it that the ends of the bread slices are sealed and the filling doesn't spill out.

These are really delicious. You could add just about anything you like to the filling such as mushrooms, bell peppers, shredded chicken, mince, etc. Using whole wheat bread makes it even tastier. It takes a little bit of time to make, but is a wholesome meal. You could add cooked chickpeas also to this mixture.


Generally, the filling is enough to make 4-6 sandwiches. Along with soup, it is a lovely meal, healthy, and hearty meal.
