Orange Marmalade French Toast

(10 servings)

  • 1 loaf of rustic bread (like French) - cut into 1/2-inch to 3/4-inch slices
  • butter - softened
  • 1 12-ounce jar of orange marmalade
  • 2 1/2 cups low-fat milk
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 6 large eggs
  • 1/3 cup finely chopped walnuts or pecans

  1. Prepare a 13x9 baking dish with a light coating of cooking spray.

  2. Spread a thin coating of butter on one side of of each bread slice and place half of the slices butter-side-down in the prepared pan. (It's okay if you have to squeeze them in or have some overlap.)

  3. Spoon marmalade evenly over all of the bread slices. Top the marmalade layer with the remaining bread slices - butter-side-up.

  4. In a medium bowl, beat the eggs with the milk, sugar, vanilla and nutmeg. Pour this mixture over ingredients in the baking dish.

  5. Cover and refrigerate overnight - at least 4 hours.

  6. Preheat oven to 350 degrees. Uncover the baking dish and sprinkle evenly with chopped nuts. Bake for 45 minute or until golden brown. Let stand 5 or ten minutes before serving.

  7. Divide into portions and serve with additional marmalade or maple syrup.



This is an overnight casserole that serves a good-sized group. You could probably squeeze a dozen servings out of it. The marmalade creates a sweet, tangy thin layer in the casserole that your guests will love.
