Citrus Breakfast Cups

(2 servings)

  • 2 Tablespoons sugar
  • 2 Tablespoons water
  • 1 teaspoon grated lime peel
  • 1 tablespoon olive oil
  • 1 large pink or ruby red grapefruit - peeled and sectioned
  • 1 large navel orange - peeled and sectioned
In a small sauce pan over low heat, combine the sugar and and water and stir until sugar is dissolved. Add the lime peel and the oil and bring the mixture to a boil. Reduce heat to a simmer and continue to cook for about 5 minutes.

As the sauce simmers, cut the grapefruit in half. Remove the half-sections of the meat, leaving the half-shells intact. Transfer the sections to a medium bowl. Set aside the half-shells. These will act as your bowls.

Peel the orange and separate the sections. Add the orange pieces to the grapefruit sections. Drizzle the sugar mixture over the fruit sections. Stir to coat the pieces.

Put equal amounts of the fruit sections in the grapefruit-shell bowls. They will be heaping full. Cover the bowls with plastic wrap and chill in the refrigerator until ready to serve - at least 20 minutes and no longer than 2 hours.
