Strawberry Breakfast Bruschetta

(8 servings)

  • 2 small ciabatta rolls
  • 2 Tablespoons sugar + 1 teaspoon cinnamon
  • softened butter
  • 1 cup fresh strawberries - hulled and diced
  • 2 additional Tablespoons sugar
  • 1 Tablespoon chopped fresh basil leaves
  • the juice of 1/2 a lemon
  • 1/4 cup sour cream
  • 2 Tablespoon plain yogurt
  • 2 teaspoons honey
  • 1/4 teaspoon vanilla extract
Preheat broiler or oven (set to broil).

Split each of the rolls with a knife. Cut each half in half so each roll makes 4 pieces of bread. Butter each of pieces. Sprinkle the cinnamon-sugar mixture generously over the butter.

Place in the broiler or oven to toast. This should only take about 2 minutes, but watch them closely so they don't burn.

For the topping, toss the strawberries with the other 2 Tablespoons of sugar, the basil and lemon juice.

In a separate bowl, mix together the sour cream, yogurt, honey and vanilla.

Take the toasted ciabatta and top each piece with a spoonful of creamy topping and spoonful of sweetened strawberries.

* You can also use vanilla yogurt and skip the vanilla extract.


This is a sweet and light breakfast dish that's very nice looking if assembled with care. My mom made this for my pre-wedding brunch and everyone loved it.
