Orange Apricot Oatmeal

(2 servings)

  • 1 cup old-fashioned rolled oats
  • 1/2 cup orange juice
  • 2 Tablespoons chopped dried apricots
  • 1 and 1/4 cups cold water
  • 1/4 teaspoon nutmeg
  • pinch of salt
  • 2 teaspoons brown sugar
  • 2 Tablespoons chopped walnuts or pecans
Combine all the ingredients except brown sugar and nuts in a medium saucepan.

Bring to a boil.

Cover and reduce heat and simmer for 5 minutes, stirring occasionally.

Let sit for 5 minutes.

Pour into serving bowls. Gently stir/swirl in remaining ingredients leaving golden brown swirl pattern in bowl for presentation.

Forget those instant packets. In about 10 minutes, you can have a delicious, deluxe oatmeal made from scratch.
