Buttermilk Waffles II

(3 servings)

  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 beaten eggs
  • 2 cup buttermilk
  • 1/2 cup oil
Mix flour, baking powder, salt and set aside. In separate bowl mix eggs, oil and buttermilk. Add dry ingredients. Let sit a few minutes while waffle iron heats.

Bake high about 2-3 minutes (depending on waffle iron temperature).

Makes 3 (10 inch) waffles.

These waffles come very moist and fluffy. If you want crispier waffles, I suggest setting at high and then let sit an extra minute or two in the iron. Note, these are NOT Belgium waffles.
