Peanut Butter Banana French Toast

(4 servings)

  • 1/4 cup milk
  • 1 large egg
  • 1 to 2 Tablespoons brown sugar
  • 1 pinch cinnamon
  • 1 pinch nutmeg
  • 1 banana per sandwich
  • peanut butter
  • sliced bread (2 slices per sandwich)
Batter makes three or more sandwiches.

  1. Mix together milk, egg, sugar and spices. Set aside.

  2. Heat frying pan over medium heat (lightly butter if using a non-non-stick pan).

  3. Spread peanut butter on one side of each slice of bread (do this to taste).

  4. Slice banana lengthwise.

  5. Layer it on peanut buttered bread slice.

  6. Top with 2nd peanut buttered bread slice.

  7. dip both sides of sandwich in batter.

  8. Fry as you would french toast.
