Morel & Swiss Quiche

  • 1 9-inch pastry for single pie
  • 1 1/2 cups Swiss cheese - grated
  • 1 cup fresh morel mushrooms - sliced
  • 1/2 cup onion - chopped
  • 4 large egg - beaten
  • 1 1/2 cups whole milk (or use evaporated milk)
  • 3 Tablespoons flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard
Place the pastry into a 9" pie dish. Cover the bottom of the pie crust with the grated cheese. In a skillet, saute mushrooms in oil or butter and spread evenly over the cheese. Saute the onion in the same skillet and sprinkle over the mushrooms.

In a bowl, combine the eggs, milk, flour, salt and dry mustard, mix well. Pour into the pie shell. Sprinkle with paprika and bake at 375 for 40-45 minutes or until the center is solid when jiggled.

A rich, delicious quiche with the flavors of fresh morel mushrooms and Swiss cheese.
