Apricot & Ginger Compote

(4 servings)

  • 1 1/2 cups dried apricots
  • 1 1/2 in piece of fresh ginger - finely chopped
  • plain or vanilla yogurt - to serve with
1. Cover the apricots with boiling water; then leave to soak overnight.

2. In the morning, place the apricots and their soaking water in a saucepan, add the ginger and bring to a boil. Reduce the heat and simmer for 10 minutes until the fruit is soft and plumped up and the water is kindof syrupy. Strain the apricots (save the syrupy stuff), and remove and discard the ginger.

3. Serve the apricots warm with some of the syrup that you saved, and a spoonful of yogurt.


Try to find unsulphered apricots, if you can - the fewer preservatives, the better!
