Low-Carb Crepe-Style Pancakes

(1 serving)

  • 10 grams soy protein
  • 1 egg white
  • 1/4 teaspoon guar gum
  • liquid sweetener - to your liking
  • dash of cinnamon (optional)
  • dash of salt
  • 50ml light soy milk
Mix all ingredients (add 1 Tablespoon of wheat bran if desired for more fiber).

Coat small pan with non cooking spray; drop batter into pan and fry on both sides.

Thin, crepe-like pancakes that you can fill or top with your favorite low-carb or carb-free syrup or jam.
