Sausage Cornbread Bake

(6 servings)

  • 1 pound pork sausage
  • 1 onion-chopped
  • 2 eggs
  • 1 cup cornmeal mix
  • 1 cup flour
  • 1 cup milk
  • 4 teaspoons baking powder
  • 1 (15 ounce) can cream style corn
  • 1/3 cup vegetable oil
  • 2 cups shredded sharp Cheddar cheese
Preheat oven to 425 degrees F (220 degrees C). Grease a 10 inch ovenproof skillet or 9x10" glass casserole dish.

In a medium skillet, brown the sausage and onion; drain well.

In a large bowl, combine eggs, corn meal mix, flour, corn, baking powder, milk, and oil. Pour half of corn meal mixture into the greased pan, and sprinkle with sausage mixture and cheese. Pour remaining batter over top.

Bake for 35 to 40 minutes, until browned on top. Let stand 10 minutes before serving.




Is great with eggs over easy or a simple omelette for a full breakfast. (Also works as a side for a bowl of chili at dinner!)
