Easy Banana Date Oatmeal

  • 1 cup quick oats
  • 1 1/2 cups low-fat milk
  • 1/8 cup brown sugar
  • 1 banana - sliced
  • 5 fresh dates - pitted & chopped
  • 1 tablespoon butter
  • 1/4 teaspoon vanilla extract
  • 1 dash of salt
This oatmeal had a great flavor. I don't know that it was just like banana bread as the recipe submitter stated, but the banana really shined through. The banana is chopped and sauteed in a minimal amount of butter and then the oats are added to that. This distributed a fruit flavor to each tiny oat, yielding a richer, more complex taste than you get from just tossing banana pieces in already-made oatmeal. Overall, I liked it! I'd make it again for sure. (Recipe submitted in 2008. It was tested and photographed in September 2013.)

How To Make Easy Banana Date Oatmeal

Melt the butter in a saucepan over medium heat and saute the bananas until they begin to turn golden brown. Add the oats, dates and milk. Allow this mixture to come to boil and immediately reduce heat to low.

Cook on low - stirring occasionally - for 5 minutes or until you reach desired consistency. Stir in the brown sugar, vanilla and a dash of salt. Remove from heat and serve. Makes 2 or 3 servings.
