Orange Maple French Toast

(2 servings)

  • 2 large eggs
  • 1/2 cup milk
  • 1 Tablespoon maple syrup
  • 1 Tablespoon orange juice
  • 1 teaspoon orange zest
  • 1/4 teaspoon cinnamon or nutmeg
  • 1 pinch salt
  • 4 slices white bread
In medium bowl, lightly beat the eggs. Add the milk, orange juice, orange zest, maple syrup and spices and mix well. Pour mixture into a small baking dish.

Place a large frying pan over medium heat and coat generously with cooking spray.

Place bread slices in the egg mixture and allow them to soak up the mixture - about 20 seconds per side. With a spatula (to prevent soggy bread from breaking apart) transfer the bread to the frying pan.

Cook both sides of the bread slices to golden brown - about 2 minutes per side.

Serve immediately with warm maple syrup.


I use low-fat milk and white wheat bread so that it's a bit healthier. It's a pretty quick recipe that tastes great.
