Shirataki Noodle Frittata

(4 servings)

  • 1 package of tofu shirtaki noodles - drained and cut into 3-inch pieces
  • 1 10-ounce package of frozen spinach - thawed and drained
  • 1 cup feta cheese
  • 2 large eggs - beaten
Preheat oven to 350 degrees.

In a microwave-safe bowl, microwave the noodles for 1 minute.

In a large bowl, combine all of the ingredients and mix well.

Transfer mixture to an 8-inch square baking dish coated with cooking spray.

Bake for 30 minutes. Turn oven off and let frittata sit in the oven an additional 15 minutes.

Cut into equal squares and serve warm.


Shirataki noodles are traditional Japanese noodles made from tofu and the roots of the Konjac plant. They are low in calories and high in fiber. They also have about 1/10 of the carbs of pasta. They can usually be found in the refrigerated specialty food section of your supermarket.
