Cornmeal Pancakes (Grandma Gubba's)

(4 servings)

  • 1 cup white cornmeal
  • 1 cup all-purpose flour
  • 2 Tablespoons sugar (white or dark)
  • 1 large egg
  • 1 cup milk
  • 2 Tablespoons canola oil
  • 1 and 1/8 cup water
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt (optional)
Mix the cornmeal and sugar together in a bowl.

In a medium saucepan, bring the water to a boil. Remove from heat and stir in the cornmeal and sugar mixture. Cover and let set set at least 10 minutes. (This is a good time to pre-heat your griddle).

In a medium bowl, beat the egg and then whisk in the milk and canola oil.

In a separate medium bowl, mix flour and baking powder.

Stir in the wet egg mixture into the cornmeal. Then, stir the dry flour mixture into the cornmeal.

Once well combined, ladle the batter onto greased, pre-heated griddle in about 1/4 cup amounts. Cook each side until done (about 2 minutes per side, depending upon heat).


We have also added a hint of nutmeg and vanilla to our batch. You can also substitute melted butter for the oil. Feel free to add extras such as walnuts, raisins, cranberrys, bananas etc. Let your creativity go wild!
