Banana Raisin French Toast

(8 servings)

  • 8 slices of raisin bread (day-old bread works best)
  • 2 medium bananas - cut into 1/4-inch slices
  • 1 cup milk
  • 4 ounces cream cheese - softened
  • 4 large eggs
  • 1/3 cup sugar
  • 3 Tablespoons all-purpose flour
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • powdered sugar for dusting
Preheat the oven to 350 degrees F.

In a buttered 9-inch square baking dish, layer 4 slices of bread side-by-side. Arrange the banana slices evenly over the bread and top the bananas with the remaining 4 slices of bread.

In your blender, combine the milk, cream cheese, eggs, sugar, flour, vanilla and salt. Pulse until well-blended. Pour this mixture over the ingredients in the baking dish. Let the egg mixture soak into the bread for at least five minutes before cooking.

(At this point, you could cover the baking dish with plastic wrap and refrigerate overnight if you wish to prepare the dish in advance.)

Bake for about 45 minutes until completely set and golden brown.

Remove from the oven and let the dish stand for 10 minutes. Cut the sandwiches into diagonals. Dust with powdered sugar and serve with warm maple syrup.
