Strawberry Streusel French Toast

(6 servings)

  • For French Toast:
  • 6 1-inch think slices French or Italian bread
  • 3 large eggs - slightly beaten
  • 1 cup evaporated milk
  • 3 Tablespoons sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg

  • For Streusel Topping:
  • 2/3 cup crushed shredded wheat cereal
  • 1 Tablespoon butter - softened

  • For Strawberry Sauce:
  • 2 cups sliced strawberries
  • 3 Tablespoons sugar
  • 1/2 teaspoon cinnamon
Prepare a large baking dish with cooking spray.

In a medium mixing bowl, beat the eggs, evaporated milk, sugar , vanilla cinnamon, nutmeg and salt. Arrange the bread slices in a single flat layer in the baking pan. Pour the liquid mixture over the bread. COVER and REFRIGERATE for at least two hours (great for overnight).

When ready to prepare...

Preheat oven to 375 degrees.

In a medium bowl, mix together the shredded wheat the butter. Spread this mixture evenly over the French Toast.

Bake for 30 minutes or until golden brown.

As it cooks, make the strawberry sauce, by mixing the strawberries, sugar and cinnamon together in a medium bowl.

Serve strawberry sauce over each serving of warm French toast.


I used crushed Frosted Mini Wheats cereal for the streusel topping and it turned out great.
