Easy French Toast Casserole

- 1 16-ounce loaf of cinnamon swirl or cinnamon raisin bread - cut into cubes to yield about 8 cups

6 large eggs - beaten
-
3 cups milk
-
2 teaspoons vanilla extract

confectioners' sugar and maple syrup for topping - optional
This recipe takes only 10 minutes to prepare. Then you need to let it refrigerate for a few hours and the baking time is just under an hour. If you don't have cinnamon bread, you can use white bread. Just mix together 1/4 cup brown sugar, 1/4 cup raisins and 1 teaspoon cinnamon and sprinkle that between the layers of bread cubes. It will taste like you used cinnamon bread. The reviews I got from friends for this dish were "so fluffy" and "very custardy". Overall: I loved it and it was as easy as the name implies. (This recipe was submitted in 2007. It was tested and photographed in June 2014.)

How To Make An Easy French Toast Casserole
Prepare a 13 x 9 inch baking dish with a light coating of cooking spray. Layer the bread cubes evenly in the dish.
In a medium mixing bowl, beat the eggs with the milk and vanilla. Pour this mixture over the bread cubes. COVER and REFRIGERATE overnight (at least 2 hours).
When ready to prepare...
Bake for 50 minutes at 350 degrees until golden brown.
Sprinkle with confectioners' sugar.
Serve warm topped with drizzles of maple syrup.
