Easy French Toast Casserole

  • 1 16-ounce loaf of cinnamon swirl or cinnamon raisin bread - cut into cubes to yield about 8 cups
  • 6 large eggs - beaten
  • 3 cups milk
  • 2 teaspoons vanilla extract
  • confectioners' sugar and maple syrup for topping - optional
This recipe takes only 10 minutes to prepare. Then you need to let it refrigerate for a few hours and the baking time is just under an hour. If you don't have cinnamon bread, you can use white bread. Just mix together 1/4 cup brown sugar, 1/4 cup raisins and 1 teaspoon cinnamon and sprinkle that between the layers of bread cubes. It will taste like you used cinnamon bread. The reviews I got from friends for this dish were "so fluffy" and "very custardy". Overall: I loved it and it was as easy as the name implies. (This recipe was submitted in 2007. How To Make An Easy French Toast Casserole

Prepare a 13 x 9 inch baking dish with a light coating of cooking spray. Layer the bread cubes evenly in the dish.

In a medium mixing bowl, beat the eggs with the milk and vanilla. Pour this mixture over the bread cubes. COVER and REFRIGERATE overnight (at least 2 hours).

When ready to prepare...

Bake for 50 minutes at 350 degrees until golden brown.

Sprinkle with confectioners' sugar.

Serve warm topped with drizzles of maple syrup.
