Savory Ham Cake

(6 servings)

  • 4 eggs
  • 1 and 2/3 cup flour
  • 2 and 1/2 teaspoons baking powder
  • 1/3 cup olive oil
  • 2 Tablespoons butter
  • 1/2 cup dry white wine
  • 1/4 cup port
  • 2 cups chopped ham
  • 2 cups Swiss cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 and 1/2 cup pitted green olives (optional)
Heat oven to 425 degrees Fahrenheit.

In a bowl, beat eggs until lemon colored.

Stir in flour, baking powder, olive oil, melted butter, wine and port.

Chop ham, cube cheese and slice olives.

Stir in ham, cheese, olives (if desired), salt and pepper.

Pour into greased cake pan (11 X 4 inches would be a proper size).

Bake for 50 minutes.

Serve warm or cold.


A savory loaf - almost more of a casserole - with ham, Swiss cheese and olives (recommended).
