Breakfast Fruit Parfait

(4 servings)

  • 1 cup granola
  • 1 8-ounce container strawberry or peach yogurt
  • 6 to 8 large strawberries - hulled and sliced
  • 1 banana - sliced
  • 1 cup seedless grapes
  • 1 peach or nectarine - sliced
  • 1/2 cup fresh blueberries (optional)
  • 1/4 cup finely chopped almonds or walnuts (optional)
The night before, mix yogurt and granola. Cover and leave in refrigerator.

The next morning, toss together prepared fruit. Layer, alternating the fruit and yogurt mixture, in tall, pretty glasses, to make a parfait.

Top with a dollop of the yogurt and sprinkle with nuts. OR - for a quick breakfast, toss the fruit with the yogurt the night before. Can be eaten on the run.


A really great way to start the day. You get grains from granola, calcium from yogurt and more good things than I can count from the fruits. Chopped nuts are optional but highly recommended.
