BLT Deluxe Scramble

(4 servings)

  • 6 eggs - beaten
  • 2 Tablespoons milk
  • 4 slices of bacon
  • 1 avocado - roughly cubed
  • 1/4 cup shredded cheese - (Cheddar or Monterey Jack are good)
  • 1 Roma tomato - roughly cubed
  • 1 green onion - sliced
  • salt & pepper to taste
  • 4 croissants - halved (optional)
Cook the bacon in skillet until well done. Drain on a paper towel and crumble. Set aside. Drain most of the fat from the pan and reduce the heat to medium low. Mix eggs and milk, add to the skillet and cook until eggs are nearly set. Add in crumbled bacon, avocado, tomato, and green onion. Toss until eggs are completely set.

Distribute even portions on top of each croissant half and top with shredded cheese. Serve!

Oddly enough, the 'L' in this BLT scramble stands for 'avocado'. The initials might be mixed up, but the taste is right on. Makes a great sandwich too!
