German Pancakes

(4 servings)

  • 1 and 1/4 cups all-purpose flour
  • 1 cup milk
  • 1 Tablespoon sugar
  • 5 large eggs
  • pinch of salt
Make a smooth paste with the milk, sugar, salt and flour. Break in the 5 eggs one at a time, stirring constantly. Beat well.

Heat a good sized frying pan and grease well. Put about 6 tablespoons of the mixture in the frying pan. Put frying pan in a hot oven. Cook until brown and puffed.

Serve with jelly, sugar and slices of lemon.

In Southern Germany the word for pancake is Pfannkuchen. Oddly enough, in Berlin the same word refers to a doughnut. German dialects can be very tricky. Be extremely careful when ordering pancakes in Berlin.
