Rice Krispie Energy Bars

(10 servings)

  • 1/2 cup sesame seeds
  • 1/2 cup sunflower seeds
  • 2 and 1/2 cups chopped mixed dried fruit (I like pineapple and raisins)
  • 1 cup quick or old-fashioned oats
  • 7 cups Rice Krispies cereal
  • 1 cup honey
  • 1 cup sugar
  • 2 cups crunchy peanut butter
  • 1 cup powdered milk
  • 2 teaspoons vanilla
  • 1/2 teaspoon almond extract
  • 3/4 cup mini chocolate chips

  1. In a large fry pan over medium-high heat. toast the sesame seeds and sunflower seeds until they smell nutty and delicious. Remove from heat. Set aside until cool.


  2. Prepare a a 13 x 9 baking pan with a very thin coating of cooking spray. Use a paper towel to absorb excess oil.


  3. In a blender or food processor, pulse the seeds and dried fruit until finely chopped.


  4. In a large bowl, combine the oats, Rice Krispies and the mixture from the blender.


  5. In a medium MICROWAVE-SAFE bowl,mix together the honey, sugar and peanut butter. Microwave on high until just hot and bubbly - stirring once after 20 seconds.


  6. Add powdered milk, vanilla and almond extract to microwave mixture and stir to combine.


  7. Pour wet ingredients over dry ingredients in the bowl. Mix the ingredients together.


  8. Fold in the chocolate chips.


  9. Press the mixture into the prepared pan. Cover and place in refrigerator to cool.


  10. When completely cool, cut into desired sized squares or bars.



A healthier, breakfast-on-the-go take on classic Rice Krispie Treats. Kids love it.
