Sher's Good-Day Skillet Potatoes

(4 servings)

  • 4-5 T. Butter
  • 7 or 8 Medium Yukon Gold Potatoes- microwaved or boiled until 3/4 of the way cooked (unpeeled) and cooled
  • 1-1/4 cups Monterey Jack or Pepper Jack cheese--grated
  • 1/2 c. grated Cheddar cheese
  • 2/3 c. diced Tomato
  • 2 T. chopped Scallions
  • Salt and Pepper to taste
  • 1/2 cup diced Avocado
  • Optional: 1/2 cup sour cream
Melt butter in heavy large skillet over medium-high heat. Dice the precooked potatoes, and cook potatoes in skillet until browned and crisp, stirring frequently.

Add cheeses, tomato and scallions and stir until cheese melts. Season with salt and pepper to taste. Gently mix in avocado. Spoon onto serving plates. Add sour cream on top if desired.


These are great just by themselves, or alongside your favorite eggs for a great start to the day. Happy Breakfast, Enjoy!
