Chocolate Raspberry French Toast

(2 servings)

  • 1/4 cup cream cheese
  • 1/4 cup raspberries - diced
  • 2 large eggs
  • 1 teaspoon sugar
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt. 4 slices white bread
  • powder sugar for dusting
  • chocolate sauce (like Hershey's)
Prepare the filling by stirring the cream cheese and raspberries together in a small bowl.

In a large shallow bowl, beat the eggs with the sugar, vanilla and salt.

Prepare a griddle or large frying pan. Set heat to medium-high and coat generously with cooking spray.

Dip each slice of bread into the egg mixture, coating both sides thoroughly.

Place bread pieces in frying pan and cook until golden brown on both sides (about 2 or 3 minutes per side).

Take two of completed French toast pieces and spread the filling mixure on top of them. Top with remaining bread slices to form sandwiches.

Cut each sandwich in half diagonally.

Dust all with powder sugar. Drizzle decorative lines of chocolate over all and serve warm.

Don't add the powdered sugar and chocolate until the last minute. It's looks very pretty right after it's applied.
