Mexican Turkey Frittata

(6 servings)

  • 8 large eggs
  • 1/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 4 ounces (1 tiny can) canned green chilies - diced
  • 1 cup low-fat cottage cheese
  • 1/2 pound Monterey Jack cheese - shredded
  • 1 and 1/2 pounds cooked turkey - shredded
  • salsa - optional
  • sour cream - optional
Preheat oven to 375 degrees. Prepare a 9-inch baking dish with a generous coating of cooking spray.

Beat the eggs in a mixing bowl until well blended. Add the flour, baking powder and salt and mix well. Stir in the cottage cheese, about 3/4th of the Jack cheese, all of the turkey and the chilies.

Pour into prepared baking dish and bake 30 to 35 minutes until center is set.

Sprinkle with remaining cheese and cook about 3 more minutes - until cheese starts to melt.

Let stand 5 minutes before serving. Top each serving with sour cream and salsa if desired.


Hearty and spicy. It great to serve with warm tortillas so guests can create little burritos if they like. Enjoy!
