Cinnamon Oat Pancake Mix

(8 servings)

  • 1 one-quart wide-mouth jar
  • 2 cups quick cooking oats
  • 1 cup all-purpose
  • 1 cup whole wheat flour
  • 1/2 cup dry milk
  • 3 Tablespoons sugar
  • 1 Tablespoons cinnamon
  • 2 teaspoons salt
  • 1 and 1/2 Tablespoons baking powder
  • 1/8 teaspoon cream of tartar
Mix together all ingredients in a large bowl until well combined. Using a rolled sheet of paper as a funnel, pour the mix into the jar.

Seal the jar.


Attach these instructions to your gift of breakfast:

Cinnamon Oat Pancakes
(Approximately 24 five-inch pancakes)

To make 12 pancakes:
  • 2 cups pancake mix
  • 2 large eggs
  • 1/3 cup vegetable or canola oil
  • 1 cup water
In a large bowl, beat the eggs, gradually adding the oil. Alternately beat in the pancake mix and the water.

Heat a large frying pan or skillet to medium-high heat. Grease the surface with a thin coating of cooking spray. Dollop the batter in 1/4 cup amounts per pancake. Cook until bubbles appear on surface and the edges are dry (about 2 or 3 minutes). Flip and cook 2 to 3 minutes until golden brown.

Serve with butter and maple syrup. Enjoy!
